Cilantro Lime Broth

It is a snowy Friday afternoon. I have laundry going, a pot of soup simmering, and I’ve just washed the floors so it smells like Murphy’s Oil Soap which is one of my favorite smells from my childhood. I have already gone grocery shopping and can now spend the evening tucked away and cozy, watching the snow from my perch in the kitchen. Life is so good.

If you are also somewhere experiencing wintery weather, or you are just looking for some extra coziness, may I suggest you simmer some drinking broth? It’s a pleasure to make and to sip.

Ingredients
3-4 stalks of celery
4-5 carrots
1-2 onions
1 chicken carcass
salt and pepper
fresh limes
fresh cilantro

Simply chop your celery, carrots, and onions into large chunks. Place in a large pot along with the chicken carcass*. Add enough water to cover the contents and then salt and pepper to taste. Simmer for an hour or so until a deep golden color develops.

Ladle some of the broth into a mug. You could stop there, but I highly recommend you add the zest and juice of a lime along with some chopped up cilantro. Sip, enjoy.

*Tip: Buy a rotisserie chicken from the grocery store. Use the chicken for meals and the bones to make broth/soup.
